Spare Ribs (8-rib)
Spare Ribs are prepared from any portion the Rib.
Set by removal of the sternum, costal cartilages and all muscle and associated tissue (sheet ribbing), on the lateral surface. Spare Ribs consist of the rib bones and intercostal muscles only.
